#HappyHour26 - My favourite summer recipe

Tahitian Coconut Chicken (serves 4)
You will need:
4 skinless chicken breasts
Plain flour
1 egg beaten
2 cups shredded coconut
60g butter
1 tablespoon oil

For the sauce:
30g butter, 1 teaspoon curry powder, half cup of chicken stock, 3/4 cup of seeded raisins (chopped), 1 apple peeled and thinly sliced, 1 banana sliced, half cup natural yoghurt and 2 teaspoons brandy (I admit I often use 3 but it's up to you).

Method:
Lightly dust the chicken in the flour, dip into the beaten egg and press into the shredded coconut. (I usually thickly slice the chicken rather than use the breasts whole as it makes it easier to cook but it's up to you). Fry the chicken in the butter and oil until lightly brown on both sides. Remove and drain on absorbent paper then keep warm.

Sauce:
Combine butter and curry powder and cook over low heat for 1 minute. Add the chicken stock, raisins, apple and banana and cook for a further 3 minutes or until fruit softens. Stir in the yoghurt and brandy and cook for a further minute. Spoon over the chicken and serve. This is quite nice with a little coconut rice.

This really is the taste of summer and it's quite easy to make.
